A cheese with tradition
This cheese from western Switzerland, with its delicate, racy flavor, has been produced in the area around the town of Gruyères since at least 1115. It is still produced today in the village dairies of western Switzerland according to traditional recipes.
Gruyère AOP owes its finesse and distinctive flavor to the premium raw milk from cows fed fresh grass in the summer and hay in the winter. This is complemented by the knowledge and experience of master cheesemakers and affineurs, passed down from generation to generation.
